Are you Trying to eat Healthier?

Me Too!  For Christmas Bill got me this awesome cookbook.  This is my new favorite cookbook with lots of yummy recipes.  

One that is quickly becoming an old standby is called "Is it soup or sauce?"  If you want to eat it as soup you add a bit more chicken broth and if you need a sauce a little less.  I even froze a couple of containers and had a nice healthy dinner at work.  Here is my version of it.  Try it and let me know what you think.  Or if you vary it let me know the results.  

Ready?  Here is what you need 

IS IT SOUP OR SAUCE
4 pounds roma tomatoes
2 medium sweet potatoes, peeled and cubed
4 thick carrots, peeled and cut 
(if the carrots and potatoes are about the same size the cooking time will be consistent and they will be ready at the same time)
1 large (or 2 smaller) red/purple onion, quartered
2 whole heads of garlic (not a clove...whole heads)

Drizzle 1/4 cup of olive oil in the bottom of a roasting pan.  Cut the tomatoes in half lengthwise and lay cut side down in pan. Sprinkle potato, carrots and onion over top.  Cut the top off the garlic and slough off the loose skin.  Drizzle about 2 TBSP of olive oil over the garlic and place the garlic on top and snuggle it into the other veggies.  (The cut side is up) I covered it with parchment paper and then tin foil before I put it into the oven at 350 degrees for between 45min.-1.5hr.  (When the carrots and potatoes are firm tender.)  Let it cool for a while.  

~WARNING~~~~~~This part is a bit labor intense~~~~~~~WARNING~

Fish out all the carrots, onions and potatoes and put in a big pot on the stove.  Then you have to pull off the skins on the tomatoes and put them in the pot too.  It really isn't that hard, the roasting loosens them.  Then squish out all the yummy roasted garlic cloves into the pot.  Add about 4 cups of chicken broth and bring the whole thing to a boil and then simmer for 10 minutes.  I then take my immersion blender and blend everything nice and smooth.  (If you don't have one of those just put a bit in the blender and blend away.  Just be careful b/c it will be very hot.)  Put everything back into the pot add some sea salt, pepper and 3 TBSP of Italian seasoning.  If you are planning on eating this as soup you can add a bit more chicken broth.  If you made it a bit too runny just bring it back to a boil and simmer it for a bit longer.  

You can serve this over pasta noodles, chicken, as your sauce for lasagna.  
You can do a ton with it. And I froze it with out problem.
